If you want to abuse skill cards and all that jazz on Izanagi, Magatsu-Izanagi always wins because of its inherent Null Light/Dark resistances. The default Izanagi has very few skills, so it's better to use him as an ingredient in fusion now, and buy him back or fuse a new one later. And there are some Izanagi variations later in the game...but that would be spoilers. In sum: you won't lose him forever if you fuse him now.

Yes there is a special fusion for jester/hunger like there is for every arcana. Magatsu-Izanagi is just a normal fusion. Special fusions are, say, Belial + Nebiros to create Alice. Boards. Persona 4 Golden.
