My biggest gripe, and one that I haven't seen mentioned in any review, is the track/car content. There's just a handful of new tracks, all returns from previous GT games. And the car list is underwhelming with regards to newer models. Only 1 Mercedes newer than 2017, the newest production BMW is the M4 from 2014.

GT7 is effectively GT Sport with most of the aspects missing from mainline GT games added back in, most of which were single-player. There isn't less multiplayer, there just is single-player, and more car customization. GT Sport is basically just Sport mode on the map in GT7. Whether multiplayer good or not is subjective.

As others have said, from what I've read PSVR generations are not "interchangeable": though you can use a PSVR 1 set on PS5 via their adapter, a PSVR 1 game won't work with PSVR 2 and a PSVR 2 game won't work with PSVR 1. But what's the all time best choice? I rarely buy VGTs because I prefer a realistic race, so I normally choose Group C and LMPs for Gr.1 - but I'll make an exception.
