Our capable herdsman, Claes Cassel, has spent over thirty years in the care and keeping of cattle, and tends to our herd of over 20 milkers. We also raise heifer calves born here on the farm, along with ten beef cows per year. Our beef cows are all grass-fed on over 30 acres of pasture that has been in the Ludlow family for five generations.As many as 54 alpacas inhabit Shalimar Alpacas, including nine babies born this year. Allow about 45 minutes for your visit with them, as you learn about their origin and how the farm utilizes the fiber. Visits are arranged by appointment only and are offered Monday-Saturday from 11:30am to 2:30pm.At Centerville Farms longhorn cattle are raised for use at Dark Horse Restaurant. These animals are free range, grass fed, producing lean fresh tasting burgers and steaks. We use some byproducts of the local breweries and farms; potatoes, squash and pumpkins, among others. Dark Horse uses nose to tail, even the bones are used for broth and glace.
